TASTING NOTES:
June One is a premium single malt gin produced by Three Societies in Namyangju, South Korea. Distilled by Assistant Distiller, Byeongsu Kim, Jung One—which appropriately translates to garden in Korean—is a powerful showcase of the flavors that characterize Korean food and terroir. 11 botanicals define the profile of this singular gin including juniper, coriander, cardamom, cinnamon, lemon & orange peel, pine needle, lavender, chopi (Korean sansho peppercorn), baby ginseng, and perilla leaf. Many of the botanicals are locally and sustainably sourced, and the pine needles are hand foraged from the trees surrounding the distillery. The botanicals are macerated in twice-distilled single malt spirit for 24 hours before the third and final run through the distillery’s 1,000-liter copper pot still.
A vibrant and inviting nose displays aromas of lime oil, green cardamom, lemongrass, and genever-esque malt wine. The floral and citrusy aromas transition to the palate, showcasing herbaceous shiso, lavender, tangerine, and pine sap.
